Anytime you write an "unauthorized" tune into the car, checksums are modified and GM will see that this happened no matter what you do afterwards, even if you restore the stock tune later. Some service departments care, others don't mind in terms of working on your car, but your official powertrain warranty with GM is gone if you tune any modules.

I have not seen a complete throttle mapping table or tables in HPT. People tweak the NPP open/close settings as you commented, modify pedal snappiness by throttle blade area tweaks, add or delete pops and crackles using spark tables (which may help with your desired "rev hang removal" as well), but I'd also be interested to see how to adjust the throttle curve directly in the tune.

Throttle controllers do it externally via falsifying the input voltage signal, but it's a dirty chip tuning style trick I'm not a fan of, and requires extra hardware, too.
