I am getting the CRS-v2 for my 718 GT4 in a few weeks, and previously had the SC3's (but are vaporware in my stock sizes for 2 years now) and now am on AD09's (because they also have stiff sidewalls).
To date the best tire I have had on my car was the SC3 with the AD09's a close second. Both the OEM Cup 2's and Dunlop Maxx Sport Race II sucked IMO.

I guess it depends on how tall of a sidewall you are getting. I have them in 315/30/18 and I feel the sidewall is fairly stiff. I've always ran lower profile tires though so I've never felt like tire sidewalls have really ever been an issue for me. I've ran taller take off pirelli slick tires before and they have a tall softer sidewall but it honestly didn't make a big difference either. All that is to say that I don't think I'm particularly sensitive to soft sidewalls, so I am probably not the right person to ask. But to me I don't feel like the sidewalls of the Nankangs feel any worse or better than the SC3.
When driving different tires the largest noticeable difference is in lateral grip between tires and how well they hold up to heat. It's very noticeable how early you can get on throttle with some tires vs others. Slower tires will give front end push way easier than the faster tires.
