Oil temps are higher than I have seen (max ~275 for me in TX) as well making me think you need to work on coolant. I run 70/30 water/antifreeze. You need to change your mixture is my advice. Easy to do and very effective.
Secondly I probably added over half a gallon after I bought the car.
