I have not changed rotors on my camaro, but typically there is a bracket that mounts to the spindle, and then the calipers mount to the bracket. This bracket usually must come off to change a rotor.
If this setup is present on our cars, then I would be sure to also have that bracket on hand. The problems you describe sound like something got bent.
I'm sure there are others here who have had these brakes apart. So far, I've only swapped pads.
