I'm still going to go 2650, mainly because I "just want it." Dumb reason, I know. But, in my experience, I always wanted more from my cars, and never got there for whatever reason. I figure with the 2650, I've got the foundation to support a big build for when I get there in several years. In the meantime, if the only downsides are cash outlay and less "hit" in the lower RPM range, I'm good with that trade off.
That said, how far can you take the stock blower these days? will it see 1000, or will it just heat soak itself to death at that point?

nothing wrong with that. As Zoh6 pointed out, 900 give or take seems to where they are getting to without a ton of effort. LMP has pushed one over 1k and went low 8's @ 160+ but I wouldn't consider that the norm. For 1k+ the 2650 is what you want.
