Launching in 3rd would lower the output torque by approx. 25%, which might workout.

We have no issue launching to a 1.20 60' in 2nd. A 3rd gear launch will be strictly to cut the time to shift and to extend the launch gear duration before needing to shift. It can be difficult to nail the 2-3 shift smoothly with how fast it comes and the torque management cut. This could be contributing to why your tires are breaking loose also. If you hear my in car videos you'll hear how it's the only shift that isn't as smooth as the rest. I think you can view this even if you don't use IG.

This is a 1.20 60', but you can actually see the tire break loose slightly on the 2-3 shift. The rest of the pass wasn't great for other reasons. Haha. It only made ~1,100 RWHP then and weighed about 3900 lbs.
