The Mustang chassis is too weak and flabby to handle a GT500 convertible, so Ford couldn’t do it. Proof is in the supercharged Shelby convertible that twisted and broke during a Throttle House video.
That said, the S197 GT500 came in a vert. Also, C7Z06 and ZR1, though those are all out of production.
