If you are able to find something, it would be very easy to relocate the rev match switch. You can just tap into the wires and install an on/off switch anywhere in the car. You wouldn't need to have the physical paddles behind the steering wheel.

As far as the quick release itself, here is the hub you will need. This is just to adapt from the Camaro to a universal wheel setup:

After buying the hub, you will still need the quick release and a new steering wheel. You can use your choice of brand for the quick release and steering wheel as long as it is a 6 bolt design setup. My recommendation would be to get a quality brand like Works Bell for the quick release and a quality steering wheel. NRG is fine for the hub (since it is just a block of aluminum, but I wouldn't use their quick release.

To my knowledge there is no way to use the original steering wheel with a quick release. Hope this helps!
