I appreciate this post.
I'm very specific about what shoes I wear whether it be on the track or for street. Outside of more expensive driving shoes already recommended here, i've actually found a thin soled pair of sketchers for regular driving. I wouldn't say they're the most protective shoes but they allow me to feel the pedal without the bulk. The cloth is breathable and thin thus allowing my foot to flex. The sole doesn't last long if you wear it on the street but at $50 I have a few pair and keep one specific to the car and one for everywhere else.
The take home here is any shoe that has a thin sole and allows you to feel the road and suspension through the pedal that doesn't have restrictive leather or cloth surrounding the foot is fine.
