Hello there! A few points:
1. I believe the break in calls for varying RPM, which you can achieve by varying speed, but can also achieve by changing gears. I just drove 1800 miles from Texas to SF Bay Area, and it was awesome (although also exhausting over only 3 days and after a red-eye flight!) Additionally, those long stretches should allow you to bed your brakes in properly!
2. Seeing as you are in California, make sure the car you’re purchasing is CA legal, with the necessary CA emissions sticker but also the copper-free brakes option. Those options are not typically selected by dealers outside of our state, and I’d hate for you to bout the car only to realize you have to get rid of it because the DMV will refuse to issue you the registration.
