It has already been done and I will be doing it this spring when the Procharger goes in. It’s main reason is for air flow. Definitely don’t let your insurance company know. Not for everyone, just the insane track guys.
Lethal does it for both air flow and the chiller to be mounted. The pic is someone else’s car and looks like just for air flow.

I wouldn’t remove the whole bar, I would do what lethal did but I also might weld a straight round bar across to support the fenders. This way lots of air flow is still coming thru with an added support. Plus leaving the area for the tow hook is essential.
