But here I am for the V8, stick convertible which I have wanted since a kid. What else is there? Mustang I suppose but they seemed a bit more $ and I do not like the look as much. Also I am working from home a lot now so I feel like I can get away with something more fun and less practical.
(I'm ruling out the 1SS, not cheap enough and not complete enough)

I understand, this is indeed a lot of money for a Camaro. The lack of adaptive cruise control is baffling, especially since GM does offer it on other vehicles.
Recaro seats aren't a must IMO, my 2SS doesn't have them and after trying them out in ZL1s, they certainly hold you in place better, but unless you pull 1+ lateral g's regularly (== track use), the standard leather seats will be just fine.
However, all said and done, there is nothing like the rumbling cross plane crank V8 experience, and even more so in a nice convertible that has seat heaters/coolers, fairly good audio, three seat memory slots, rear camera mirror, all the safety goodies etc. Whether it's worth $55k is 100% your call... prices have been going up like crazy, so it isn't like you could get a German rival for this price. These also seem to be the very last years to make it happen.
