The whole alignment directly after spring installation I don't necessarily agree with, I've always waited a week or so. Apparently even if Eibach installs your springs, they will align right afterwards.

For OEM fender height, it seems like I remember around 27.5" front and around 27.625-27.75" rear.
I had the Pro Kit installed by Eibach and they do include the alignment as part of the install. They do drive it around a little before they align it, so it is pretty much settled at that point. All Eibach kits that I have installed in the past on different vehicles seem to come that way. They don't drop much lower than after day 1 of driving, unless the person who installed it did not seat it properly or something like that. I measured my wheel gap (not from the ground) as that was the most important part of my lowering experience and it did not change much at all from the time I left Eibach to today, about 9 months later...maybe a millimeter or two, that is it. I made a point of measuring it right as they handed my keys back to me....then again when I got home...90+ miles later...then a week later, not much change at all. If I remember correctly, the SS kits drop a little more than the ZL1 kits.

As for the alignment, mine was spot on, but I have had other ZL1 owners complain about the Eibach alignment. I guess it just depends who you get to do it....I was lucky it seems. In any case, Eibach has always been a good set of springs, if anything to complain about they usually do not go as low as other lowering springs, but I guess they are more conservative, more on performance than for show, but always good quality and good results on the track.
