You really need to watch them and check the work regardless of where you go. And you need to do this every time.

Personally, I do as much of my own work as possible. But when I have to bring my car somewhere, I am always watching so make sure the work is being done right.

And ask questions. How do you intend to lift my car? What oil and filter is being used? etc. If they can't or won't give satisfactory answers, get out of there.
