When you deviate from the normal Chevy spec'd sizes and offsets the information tends to get a little fuzzy. Some people have luck with a size, and others wont. The standard SS is 8.5"/9.5" with 245/275 tires front to rear. The SS 1LE is 10"/11" 285/305 tires front to rear.
I can't provide any feedback on offsets other than what GM has spec'd out already. Keep in mind that if you end up running a square setup (same front and rear wheel/tire), that you can rotate the tires for even wear, and will also extend the mileage warranty on most tires.
Krops, maybe we can try to help him instead of posting one-line comments.

I appreciate it! I actually didn't know that the stock wheels were 8.5/9.5, just knew the offsets for them. That helps. So I definitely should stick with the 10.5 option for both rear/front? I do want to stay as close as stock as possible, to avoid rubbing and issues. I like the look/functionality of a square setup, but from reading everyone needed spacers. If I ran the 10.5 with 285's square setup, for example, wouldn't I need a 5mm spacer in the front?

If you're just going for the look, it should be fine.. you need a spacer up front since it's going to be sunken vs stock, especially for an SS. If you're going for performance I'd probably look at a different brand with wider wheels and better offsets
I'm using this to compare fitments

I think that's pretty close to what I was looking for, for tire sizes. So I could probably do similar to what you're doing just with that wheel.
Are you going to rub with a 275 on a 20x9 with +35mm offset without a spacer? If you don't, I think that's what I want to go with to be honest.
For the performance aspect, my current tires are stock wheels with 245 in the front and a 275 in the rear, so this will be an upgrade and a much wider tire than what I have. I want to obviously keep the handling ability, and get better traction. I won't see a track probably, but spirited driving.

I searched for hours trying to understand different setups. It's my first time so I just didn't want to shell out thousands and mess it up, that's all.
I appreciate all the help guys, thank you
