Dexos1 5W30 oil is fine for everyday. GM wants 40wt and even 50wt oils for the track due to elevated oil temps. If you are tuned pushing more power then run the "Track" oil for the added protection.
All oils get thinner with temp, higher viscosity oil will maintain better oil pressure and bearing protection due to being a few points higher at temp.
