If you wanted to stack them you could but for street pads one shim is plenty.
The stock shims are some kind of fiber/composite coated steel.

I’ve run OE pads and DS2500 with the stock shims. Hard to say where the stock shims stand in comparison to Ti as far as heat transfer without knowing what the stock shims are coated with.
