In MN "premium" is a hodgepodge of results all based on the station. Some places are 91E10. Some are 92 Non-oxy, some are 93 Non-Oxy. According to my tuner - the 91E10 is the "hardest to detonate" fuel of the three, so it if it a higher boost / higher compression build he will tell you to run it over the non-oxy options.
Mind you the guy has flex tuned thousands of cars - Minnesota was the first state to really have E85 readily available (you have been able to buy it at the pump since the early 2000s here) and he jumped on that bandwagon early. There are not too many tuners with a dozen plus years experience, combined with the fact that he has work year round he has seen a lot of things. Seriously - he has had trailers show up from out of state with cars in them with no appointment because he had a phone conversation with the guy a week prior.
As far as being able to tune a dozen cars a day - he does the homework on each tune before he shows up at the dyno and has everything staged. Some are just touch ups (like someone repulleyed their blower) and some are complete tunes, but he will drive the first car to the dyno himself, have his "runner" follow him there with the second car, and once the first car is done, the runner is going back to the shop to get the third. Runs them thru one after another non-stop as he has to rent the dyno by the day.
