pick the lowest gear/highest rpm you can get traction from. my car is stock. anywhere under 40 it spins so i typically leave in 2nd unless it’s a real slow roll. the engines ability to make tq at low(er) rpm means you can drag it down to 3500-4k and it’ll still leave pretty good.
find some stock LT1 dynographs. it’ll give you a better idea of what’s going on. they make strong tq as low as 2k rpm, which is good for just driving around, i suppose.
