The whole point of manual mode in the A8 is to give the driver total control of the transmission shifts. So that means you have to down shift it into the correct gear so the engine moves up into the power band(peak torque) which is around 4200 rpm and then you have to upshift it manually around 6400rpm. You can't just floor it in 6th gear from 40 mph and expect the car to do anything with the engine RPM around 2k. You would need to hold the left paddle and then it will down shift into the optimal gear for Wide Open Throttle acceleration which would be 2nd gear from 40 mph.

That being said you should just leave it in Auto mode and let the computer do the work.
