For the GoPro mount - I've been pretty happy with the Tackform headrest mount. It's not as stable as a window mount, but mounting to the driver seat and a newer GoPro with image stabilization takes care of most of the shake.
I'll be headed to Germany in August, and most likely renting a little Swift from those Rent 4 Ring guys in the first pic up there. Can't wait! Nurburgring is a bucket list item for me.
