Carbon fiber wheels, a DCT, 760hp and whatever aero they are slapping on should give it a considerable advantage over the ZLE. I expect it to be around 2-3 secs quicker on the same track.
Very valid argument, here's my counter:

GT350R vs. ZL1 (M6) Head to Head was pretty close, what the 350R lacked in HP (125hp deficit) it made up for with weight and MOST importantly tires, it was on R-Comps while the ZL1 was on the 220TW SC3s.

Now for the ZL1 1LE vs. GT500 "track pack": If/WHEN we see this comparison it will almost certainly be with the A10 instead of M6 so the DCT will be less of an advantage for the stang. Yes it will have the HP advantage over the Z but it will not have the GRIP advantage like the previous scenario, I would say that goes in favor of the Z this time, because despite popular belief I can say will 100% confidence that the SC3R is a better tire than the Cup2 and there's more of it 305/325 vs 305/315! And we all know the Alpha chassis is better than the stang chassis, the big question is weight, if it's as chunky as some people are thinking that 100HP won't be that much of an advantage as we think...

So I think in a GT500 vs ZL1 1LE A10 it will be VERY CLOSE! Could come down to the track, say Road America>GT500, Laguna Seca>ZLE, you get my point.
