You have a cam though, which makes a huge difference. I would expect a whipple stock cam car to be similar to a stock eaton but cammed car.

Also, doesn't a dyno dynamics read even lower than a mustang?

Either way, I'm not going to dwell on this. I'll just try it on some other dyno's to see what happens. Ultimately, my fault for not getting a baseline before I modded and I suppose that, ultimately, dyno numbers don't really matter at the end of the day.
