What is risk of shimming motormount ? oil level reads off by 1/16" ? I've done worse.. putting turbo on engine that didn't have one to start with. Changing engine location to make turbo fit. Just cuz it left factory one way, does not mean you can't changei t, as illustrated by OP, adding big af headers.
I would loosen all header bolts and see if there is any play.. even 1/64" gained at header port can translate into big changes at discharge end.
