I do appreciate the torque difference between V8 and V6, and the L99 has great torque and flatter torque curve than the LS3. It feels great but I rarely get to use it on the street.
Fuel economy is not a factor for me, but using regular is; some areas I travel to don't have 93 octane, and in some backwaters, you get the feeling no one ever buys the premium.
The other factor is summer tires on the SS. I never drive in winter, but these are a handicap on cold rainy days, which can happen any time of year here in New England.
Gonna have to test drive a Gen6 V6. After 9 years with a Gen5 V8, I will know right away whether the V6 is good enough for me.

I have the same car as you do currently. Here's my take and I've never been in a Gen 6 anything so full disclosure there.
The L99 is fine on 91. I'm running a 91 tune until my long trips are done in the next month or so then I'll put the 94 tune back on. But the car has plenty oomph with just 91 currently. Or do you guys not have 91 down there?
Tires- I ditched my Summer tires and run P Zero All Season Plus tires now. Way more tread life, smoother ride and grip as well as my BFG Sport Comp 2's did for my driving style and ability. And they can handle some snow should I ever get caught though not likely.
Torque- Your right the L99 has a great low end & the VVT broadens the curve. I'm sure the V6 will be plenty fast but I suspect you have to wring it out more which I think is harder to do in the real world. That nice fat torque is there in the l99 to get you moving quick while still under 3000 RPM or so. Thats the one reason I'd be reluctant to have a 5.0 Mustang even though its a crazy fast car I suspect it would be harder to get into the power band without revving it up higher when driving normal.
That said only test driving one can really make up your mind & if you are happy with it hey go for it! You are right the regular gas aspect of the V6 would be appealing for sure.
