(1) Because I'd rather do what it does all by myself (and I have had the opportunity to use it). It's more satisfying for me to always do this myself even if I don't always get the revs perfectly matched than to have it done for me by a machine that never gets the rev-match wrong.
(2) Because I'm not going to go out and buy one or two more cars just so all the cars I own will work this same way.
(3) There's something about having ~50 years of "muscle memory" that makes doing it yourself no harder than taking your next breath.
