I would think it would actually be better than on a dyno. Most shops I have seen run nice big fans and have a decently controlled environment. Street tuning would seem to be more “real world”....

This. Fairly common problem. I’ve even seen the pins bent down inside the connector and not making contact at all. But as Dysan said, check that harness over good as it’s likely your problem.
