Update: Not sure what happened, but the functionality has returned to the way it was before. I can now enable stealth mode with the car in accessory mode. Guess the car was just being fussy.

2019 SS owner with NPP here. I used to be able to engage stealth mode while the car was off by enabling accessory mode (holding down the ignition button for some number of seconds without the clutch)...
