The HUD and Nav seem to be exceptions to the "1SS rule"; carried over from the 2SS for the benefit of the track enthusiast.

If I understand correctly, the hood vents are a dealer-installed LPO option...not model/package specific...so I imagine you would be able to get one of whatever color vents they offer.

I don't believe Chevy has ever offered a rear seat delete on the 5th or 6th-gen Camaros. This isn't a "stripper" car...it still has A/C, leather, power everything, HUD. The 1SS is actually quite well...
