Is there a setting that will allow Rev Match to be on by default? I will keep looking but if there is I haven't found it yet.

No, sorry. If you want rev match on every time you drive you will have to add that step to your start up routine as a habit.

I think I remember someone posting about how they did some rewiring to make the rev match stay on after a restart. It looked like a lot of work.

Yes, the trick was to design and install an electronic gizmo that sends the required message to the BCM a few seconds after startup, essentially "pulling" the paddle electronically. I don't remember the thread title unfortunately, since my car is an auto and thus this hack isn't relevant to it.
