Depends if you're wanting to maintain streetabilty or go full race set up. If it's just for racing go with 4.5 inch wide wheel and skinnies.
If it's going to be street driven frequently I wouldn't go smaller than 8inch wide wheel.

I don't want too loose the street ability of the car, I've seen that if the tires are a big difference it will mess with the traction control.

I'm not 100% on 6th gens but I know on the 5ths 10.5 won't clear the control arms on a 17inch wheel. Most go with 17x10.
But the tire stated is IMO the best to go with.

Wow, didn't realize Nickey Chevy was still building cars. Back in the 60s, my friend had a Nickey 427 Camaro, and I had a Motion Performance SS Chevelle.

I think for M6 cars this is better than DR provided you put them on at the track. Not the best for street driving.

That's Kool. NicKey Chevrolet closed it's Doors at the end of 1973. NicKey Performance /NicKey Chicago Brand is the current business which exists today.
