I either leave the car outside for a bit to cool off or if I have to get it inside right away (raining, etc) I'll open the garage door full or half way at least for a while.

That only proves coolant temperature.

This brings up a debate I am having currently. My LTS make it hot under the hood with the cam, to the point where after driving a while, my starter gets heat soaked and doesn't want to restart easily. All gauges read accurately. Occasional misfire code blinks from the plug wires. Trying to figure out ways to vent it and cool it. Cats being deleted helped a little, but not a problem solve. Any suggestions?

It surely does. But it's totally normal.

Well I noticed today that my coolant temp can sometimes stay at 189/190 degrees and then sometimes is goes up to 199. It was at 189 after 40 minutes of driving but it was cooler today. My V6 shot up to 199 degrees and stayed there. Is it normal for the V8 to run as cool as 189 or do I need a thermostat?

There are normal variations for the coolant depending if your cooling fan is on, ac is on or off, and load on the engine. Mine varies from 189-220, and it's 100% normal. It won't go over 202 with A/c on, it will go to 220 without. If you ever hit 230-250, then worry.

There's a lot of aluminum and metal in the engine compartment getting heated up so it's going to give off some heat for awhile after you shut her down. No worries, just think of it as a 6.2l space heater.
