The recaros actual do give you about an inch of extra headroom at he lowest setting.

This is only my observation from sitting in them

I have the sunroof, and would like some more headroom. I need to start looking into this idea more.

You could probably remove the headliner all together for these events and replace after idk how much space it would free up though

I think its the same. Cause i got the regular seat. Went on the track two weeks ago and i have some issue on head space with helmet. I cant sit the back straight i need to reclined it a little bit. I think its not good cause i couldnt get a proper posture while twisting my car on the track

The sunroof was the first thing I checked before ordering my 2010. It was clearly evident that I would not fit while wearing a helmet with a sunroof equipped car and I'm just over 6'.

If you are having height issues, then the only thing might be to go with aftermarket seats where you can adjust how low the seats sit.

I doubt if the factory Recaros will gain you any height advantage.
