You can inflate to the maximum listed on the sidewall of the tire, I believe it may be 50 psi for the Pirellis.

honestly after doing this for 3 years now... i don't think it made any difference for my car... mines stored with whatever it has in it...

Mine are nitrogen filled so I did not change a thing. They should be the same when I take it out of storage in the spring as when I put it into storage.
