The doors will lock when the car is put in gear. Not when you start it.

On my Regal (factory alarm) I get out of the car, close the door and after a few seconds the doors lock and the alarm sets. I have had that in my '99 and '06 Grand Prix with factory alarms.
If the Camaro doesn't do it, I find it odd but nothing that is horrible. I just have to remember to hit the button.

Think a lot of ppl would accidentally lock the keys inside

yep, especially times when you don't necessarily take your keys with you, like pumping gas.
