Very very possible. A well set up/driven 5.0 can be killer. I had, ported Boss IM, 3:55s, 3800 converter, full exhaust, E85 and a 17" radial and I was running 7.3s@97 in 2000+ DA car had a few more tents in it on a cooler day. Did the math and it would have been a low to mid 11 in the 1/4. I can't remember what exactly the math equated to as that was over a year ago lol. 5.0s respond very well to bolt ones. Problem is (just like with any car) 95% of the people that own them have more money than driving ability, that's why you see full bolt on Coyotes and 5th gens running mid 13s lol

A 5.0 can get within range of the GT500 pretty easily depending on what year we're talking about. In 2011, the iron block 5.4 GT500 wasn't much quicker than the new-at-the-time 5.0.

The 5.0 is one hell of an engine, so it's not difficult to get some speed out of it.

Im only talking about the 660 hp gt500 5.8 liter. i can see a auto trans setup right full bolt on hanging with one but im also only talking manual trans. I dont have interest in the automatics but thats just me. Nothing wrong with automatics i just kinda feel like its cheating lol unless its auto vs auto. I raced a manual hellcat and won (AT THE TRACK) even from a roll we were neck and neck but i suspect the auto would take me but you could eat a sandwich and race in an auto at the same damn time lol
