Couldn't agree with you more. If they want to keep the history intact, the Z28 should be the lightweight road racer, and the SS the drag car.
I don't know many details on the upcoming Boss Mustang, but if they do it right they'll keep it NA, raise the rev limit, and keep it light. I just hope they don't add FI, the GT500 already has that covered.
