Quick questions

Is the 2016 Camaro going to be a 5th or 6th Generation car? What makes a car belong to a certain Generation?

It basically comes down to the body style, the current 5th gens started in 2010 till current, the 6th gens will have a new body style significantly different from the 5th and should arrive as a 2015 or 2016 model.

The 2016 Camaro will be a 6th Gen built on the Zeta platform in Lansing Michigan.

2015 will be the last year of the 5th Gen built in Oshawa Canada

It's known as a Mid-Cycle change, and is quite common.

Mustang had its last refresh in '10. '05-'14 is Mustang's 5th Generation.

CAMARO GENERATIONS:

Gen-1 = '67-'69 (some will say '69 was a refresh)
Gen-2 = '70-'81 (refresh in '73, '74 and '78)
Gen-3 = '82-'92 (refresh in '85, '91)
Gen-4 = '93-'02 (refresh in '98)
Gen-5 = '10-'15 (refresh in '14)
Gen-6 = '16+

Each Generation shares a relatively "common" platform-chassis. MCEs generally involve a facelift attached to the "current" body shape.

Special Edition models are not necessarily an MCE.

Zeta isn't at the end of the Greek alphabet though. Its only the 6th letter (out of 24, I think). Omega is the last letter of the Greek alphabet, which is why the phrase "from alpha to omega" means "from beginning to end"
